  1. It has a tender yet noticeable texture that stands up to the fork in raw salads
  2. Adds nutrition and texture as a topping to sandwiches and wraps
  3. Brings “greens” to breakfast when combined with scrambled eggs, or in an omelet or frittata
  4. Cooks up quickly in the sauté pan with olive oil, garlic cloves and red chili flakes
  5. Wilts perfectly when combined with roasted vegetables right out of the oven
  6. Blends nicely into green smoothies – you can really pack handfuls in there with fruits and ice and hardly notice a “green taste.”
