Mashed Purple Cauliflower

Light, fluffy and delicious – Mashed Purple Cauliflower! You gotta try it! The flavor is brightened by a garnish of freshly chopped Parsley or Cilantro. This recipe was super easy thanks to a Vitamix Blender and a short cooking time.,/p>

  1. Wash 1 head of Purple Cauliflower, core and trim into even-sized florets
  2. Boil or steam florets until just tender enough to slide a knife in and out without getting stuck
  3. Add the cooked Purple Cauliflower to a blender or food processor
  4. Add 2 tbsp butter, ¼ cup plain Greek Yogurt, ½ tsp Sea Salt, ½ tsp Cracked Black Pepper (or to taste)
  5. Blend until smooth
