Lean Smashed Red Potatoes


This easy to prepare recipe features some healthy ingredient substitutes – high-protein Greek yogurt instead of sour cream and Olive Oil replaces butter. Omit the raw garlic of that is too string of a flavor for you.

  1. Wash and quarter 2 lbs of Red Potatoes (skins on)
  2. Boil Potato pieces until tender enough to easily pierce with a fork
  3. Place boiled, drained Red Potatoes in a large mixing bowl
  4. Add to bowl:
    • 1 clove of Garlic, minced
    • 1 cup plain Greek Yogurt
    • 2 tbsp Extra Virgin Olive Oil
    • ½ tsp coarse salt and cracked black pepper
  5. Smash the ingredients into the potatoes with masher or a sturdy untensil
  6. Dice few leaves of fresh Italian Parsley, fold into potatoes, serve
